These monkey bread-style muffins are the perfect appetizer for a house party. It's important to use non-puff pastry dough to prevent it from falling apart when scalding with baking soda. Each muffin is filled with cheddar and baked until the center is melted and the outside is golden brown, like a pretzel.

Ingredients:

  • 0.5 cups of baking soda
  • 2 teaspoons coarse salt
  • 1 tube (450 g) refrigerated biscuit dough, such as Pillsbury
  • Premium flour for working with dough
  • 1 cup freshly grated sharp cheddar (about 100 g)
  • 1 large egg
  • Cooking spray to spray the molds
  • Coarse salt, for sprinkling
  • Honey mustard, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C and line a baking sheet with parchment paper.
  • Step 2
  • In a wide saucepan, combine baking soda, coarse salt and 8 cups of water and bring to a boil over high heat.
  • Step 3
  • Meanwhile, divide the dough into buns and cut each into quarters. Lightly flour a work surface and roll each portion of dough into a circle approximately 8 cm in diameter. Spoon 1 heaping teaspoon of cheddar cheese into the center of each piece of dough. Gather the dough around the filling and roll into a small ball.
  • Step 4
  • Cook the dough balls, a few at a time, turning once, until slightly puffed, about 30 seconds. Transfer with a slotted spoon to a lined baking sheet.
  • Step 5
  • In a small bowl, whisk the egg with 1 tablespoon of water. Spray the 8 cups of a 12-cup muffin tin with cooking spray.
  • Step 6
  • Place 3 balls of dough in the bottom of each prepared muffin cup. Top with a little of the remaining cheddar cheese (about 1 teaspoon per muffin), then add a fourth ball of dough, just to the edge. Brush generously with beaten egg and sprinkle with coarse salt.
  • Step 7
  • Bake until the muffins are puffy and golden brown, about 15 minutes. Let cool slightly and then remove from the muffin tins. Serve with honey mustard.
