These ear-shaped puff pastries, or palmiers, will grace your table with their striking appearance alone. Their stunning filling of Parmesan cheese, meat, and caramelized onions will surely impress, and they'll be gone in minutes. Making these puff pastries is easy. You'll need a sheet of puff pastry, grated Parmesan cheese, raw pork sausages (remove the casings and fry the minced meat), and onions. Caramelizing the onions takes the longest; you'll need patience and sautéing them, keeping a constant eye on them to ensure they don't burn and to achieve the perfect caramelized hue with a hint of sweetness. But once you try them, you'll know it was worth it.


Ingredients:

  • 2 tbsp (30 g) butter
  • 2 onions, chopped
  • 220 g raw pork sausages
  • 1 sheet of frozen puff pastry (from a 0.5 kg package), thawed
  • 0.5 cup grated Parmesan (grated on a very fine grater)
  • 1 large egg
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the skillet over medium heat, add the butter, add the onion, and cook until the onion darkens, 40-45 minutes. Remove the onion from the skillet and set aside. Add the sausage to the same skillet and crumble; cook until tender, 5-8 minutes.
  • Step 2
  • Roll the dough into a 25x30 cm (10x12 in) rectangle. Sprinkle the dough with cheese, then sausage, then onion. Roll both sides toward the center of the rectangle until they touch. Refrigerate for 20 minutes or freeze for 10 minutes.
  • Step 3
  • Preheat oven to 200°C. Line 2 baking sheets with parchment paper.
  • Step 4
  • Slice the roll into 0.8 cm thick slices and place them on prepared baking sheets. In a small bowl, mix the egg and 1 tablespoon of water and brush the tops of the slices. Bake until golden brown, about 20 minutes.
