Rice with cilantro and fried plantains

Rice is incredibly delicious if you cook it not in water, but in aromatic chicken broth mixed with chopped cilantro and garlic. When it's ready, stir in finely chopped cilantro. The flavor will be very spicy and refreshing. Serve with fried sweet plantains and serve as a side dish with meat or poultry. Perfect for New Year's or Christmas.


Ingredients:

  • 2 and 1/4 cups medium-grain white rice
  • 1 cup cilantro sprigs + 2 tablespoons chopped leaves
  • 1 clove of garlic
  • 2 cups lightly salted chicken broth (or water)
  • 1 tbsp. vegetable oil
  • 1 package 280g frozen fried sweet plantains
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 375°F (190°C). Combine cilantro sprigs, garlic, chicken broth, and 1 1/4 teaspoons of salt in a blender and blend until smooth. Transfer to a liquid measuring cup and add enough water to make 3 3/4 cups of liquid.
  • Step 2
  • Heat vegetable oil in a medium saucepan over medium-high heat. Add the rice and cook, stirring, for 1 minute. Add the cilantro broth and bring to a boil. Reduce heat to low, cover, and simmer until the liquid is absorbed, about 20 minutes. Remove from heat and let stand, covered, for 10 minutes.
  • Step 3
  • Place the plantains on a baking sheet and roast until heated through, 15 minutes. Stir in the chopped cilantro and rice. Serve with the plantains.
