Green bean casserole is an American dish traditionally made for Thanksgiving, featuring green beans, canned Campbell's mushroom soup, and fried onions. Over time, however, it has become increasingly popular to use only fresh ingredients, and this healthy and delicious dish is now appearing at other holidays. The beauty of casserole is that it can be assembled in advance, allowing you to save some time for relaxation during the pre-holiday rush. Place the finished dish in a baking dish, wrap it, and freeze it. Just before serving, pop it in the oven, topped with fried onions.


Ingredients:

  • 0.7 kg green beans, trim ends, cut pods in half
  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 220 g of mushrooms, thinly sliced
  • 2 tbsp. premium flour
  • 2 cups lightly salted chicken broth
  • 0.5 cups low-fat cream (10%)
  • 1.5 tbsp. fried onions
  • Special equipment: 3-quart baking dish
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Bring a large saucepan of salted water to a boil. Add the green beans and cook until bright green and crisp-tender, about 10 minutes. Drain and shake off excess moisture; set aside.
  • Step 2
  • In a medium saucepan, melt the butter over medium heat. Add the onion and cook, stirring, until softened, about 8 minutes. Add the mushrooms and a pinch of salt and continue cooking, stirring, until softened and most of the liquid has evaporated, about 10 minutes. Sprinkle in the flour and stir until all the flour is absorbed, about 1 minute.
  • Step 3
  • Add the chicken broth, heavy cream, 3/4 teaspoon salt, and a few grinds of freshly ground black pepper. Bring to a boil, then reduce heat and simmer, stirring, until the sauce thickens and coats the back of a spoon, about 5 minutes. Remove from heat, add the green beans, and stir to coat. Transfer to a 3-quart (3-quart) casserole dish.
  • Step 4
  • Let the pan cool to room temperature. Wrap it tightly in plastic wrap and foil, label it with the date, and freeze for up to 2 weeks.
  • Step 5
  • To serve, preheat the oven to 350°F (175°C). Remove the film and foil from the frozen casserole. Cover with fresh foil and bake until heated through, about 45 minutes. Remove the foil and top with the fried onions. Continue baking until the beans are heated through and bubbly and the onions are slightly crisp, about 20 more minutes.

    Note

    You can bake the casserole right away instead of freezing it. Simply top with fried onions and bake until heated through and the onions are crisp, 25-30 minutes.
