Preparation:

    Step 1
  • Preheat oven to 180°C.

Fold the pumpkin, condensed milk, cinnamon, ginger, nutmeg and a pinch of salt in a medium bowl and stir to combine.
  • Step 2
  • Roll out 1 sheet of dough on a lightly floured surface with a rolling pin to form a 20 x 30 cm rectangle. Trim the dough to form a square, reserving the trimmings for garnish. Cut the dough into 6 equal rectangles, each approximately 8 x 15 cm. Transfer to a baking sheet lined with parchment paper.
  • Step 3
  • Roll out a second sheet of dough to the same thickness. Cut into thin strips 0.5 cm wide and 17 cm long. Repeat with the remaining dough scraps. Transfer to a parchment-lined baking sheet.

Place 1 heaping tablespoon of filling in the center of each rectangle. Use a spoon to spread the filling evenly, leaving about 1 cm of space around the edges.
  • Step 4
  • Lightly beat the egg with 1 tablespoon of water in a small bowl. Use a pastry brush to brush the edges of the pies with the egg wash. Place strips of dough at different angles over the filling to create a mummy-like appearance. Press the edges with a fork and trim off any excess with a knife. Lightly brush the tops of the pies with the egg wash. Place 2 raisins on each pie for eyes.
  • Step 5
  • Bake until deep golden brown, rotating the pan halfway through to ensure even color on all sides, 20-25 minutes. Cool slightly on a wire rack, about 5 minutes.

Serve as is or garnish with a simple glaze. Combine powdered sugar with 0.5 teaspoon of water. Stir until smooth and glossy. Transfer the glaze to a plastic bag and snip off the corner. Pipe the glaze onto the pies along the pastry strips. Serve.
