Baked apple desserts are much healthier than regular pies, yet just as delicious, especially when the apples are topped with a delicious, crunchy topping like this crumble. This crumble is quick to make, and you don't even need to roll out the dough. Place apple slices sprinkled with sugar, cinnamon, and lemon zest in a greased pan and top with a topping made from oats, flour, brown sugar, and butter. Baking in the oven will soften the apples and crisp up the topping, making it caramelized and crispy. A perfect combination of textures! Top the crumble with vanilla-cardamom caramel sauce and serve with tea or a scoop of ice cream.


Ingredients:


Apple filling
  • 3 Granny Smith apples, peeled, cored and chopped
  • Juice and zest of 1 lemon
  • 2 tbsp. granulated sugar
  • 1 teaspoon ground cinnamon
  • A pinch of salt

Crispy crumble
  • 2/3 cup flour
  • 2/3 cup brown sugar
  • 2/3 cup oatmeal
  • A pinch of salt
  • 120 g butter

Caramel sauce with vanilla and cardamom
  • 2/3 cup sugar
  • 1/4 cup water
  • 1 tbsp (15 g) butter
  • 0.5 cups heavy or low-fat cream
  • 1 tsp vanilla extract
  • 1 tsp cardamom seeds, lightly crushed to release the oil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 175°C.
  • Step 2
  • Prepare the apple fillingIn a small bowl, combine the apple pieces with the lemon zest and juice, sugar, cinnamon and salt and set aside.

    Make crispy crumbleIn another small bowl, whisk together the flour, brown sugar, oats, and salt. In a ceramic baking dish, microwave the butter until about half melted, 10-15 seconds on high power. Pour the butter into the flour mixture and stir with a fork. Leave any excess butter in the dish and arrange the apple slices on top. Top the apples with the topping.

  • Bake until apples are cooked through and golden brown, about 45 minutes.

  • Make caramel sauce with vanilla and cardamomIn a medium saucepan with a heavy bottom, combine the water and sugar and bring to a boil over medium-high heat. Let the syrup simmer without stirring. If necessary, the pan can be tilted to the sidesCook until the syrup is light golden brown, about 7 minutes.

  • Remove the pan from the heat and whisk vigorously until the mixture begins to bubble. Add the cardamom seeds and stir to distribute evenly. Keep an eye on the syrup, the sugar burns quickly.Return the saucepan to the stove and bring the mixture to a boil, then remove from the heat and let cool for a few minutes. Stir in the vanilla extract and strain the sauce before pouring it over the cobbler.
