Recipe for cooking the dish Mexican fast food - tacos with garlic sauce and a filling of braised beef and red cabbage. The pre-seared beef was placed in an ovenproof pot and simmered with beef broth and red wine. The sauce was made with garlic paste and the braising liquid.


Ingredients:

  • 2 kg beef brisket
  • 6 cloves garlic, plus 2 unpeeled heads of garlic, cut into 4 pieces
  • 2 tbsp. l. olive oil
  • Coarse salt and freshly ground pepper
  • 1 tbsp smoked paprika
  • 1 tbsp chili powder (See the recipe for the chili pepper spice mix here)
  • 3 tbsp. l. canola oil
  • 3 large red onions, thinly sliced ​​into half rings
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 cup dry red wine
  • 2 cups beef broth
  • 2 bay leaves
  • 16 - 20 small wheat tortillas (recipe corn tortillas)
  • Shredded red cabbage
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare garlic: Preheat oven to 160°C (325°F). Place the cut garlic heads on a foil-lined baking sheet. Drizzle with olive oil and sprinkle with salt. Fold the foil in half and place the baking sheet in the oven preheated to 160°C (325°F). Bake until the garlic is softened, about 45 minutes. Peel the garlic afterward.
  • Step 2
  • Meanwhile, fry the beef: Grind 6 cloves of garlic into a paste using a food processor. Season the meat on all sides with salt, pepper, paprika, and chili powder.

    Heat 2 tablespoons of canola oil in a large ovenproof skillet. Brown the beef in batches over medium-high heat on both sides, about 5 minutes each. Transfer the browned beef to a cutting board and brush with garlic paste. Drain the skillet and wipe dry.
  • Step 3
  • Cooking beef in the oven: Heat the remaining tablespoon of canola oil in a saucepan over medium heat, add the onion, and cook, stirring, for 5 minutes. Season with salt and brown sugar and continue cooking for another 5 minutes. Add the apple cider vinegar and simmer for 2 minutes. Add the beef and wine and simmer for 25 minutes.

    Add the bay leaves and beef broth, bringing to a boil with the lid on. Then place the pan in the oven and cook until the beef is tender, 2 hours to 2 hours 30 minutes. After this time, transfer the beef to a platter and let it rest for 15 minutes. Then slice the beef thinly against the grain.
  • Step 4
  • Prepare garlic sauce: Place the pan on the stove, remove the bay leaves, and simmer the braising liquid until thickened, about 20 minutes. Stir in the roasted garlic, season with salt and pepper.
  • Step 5
  • Fry the tortillas in a frying pan. Mix the meat with a little garlic sauce. Place the meat and shredded cabbage on each tortilla.
