Ingredients:

  • 8 dried guasillo chiles, seeded
  • 2 plum tomatoes, cut into 4 pieces
  • 1 small onion, cut into 4 pieces
  • 8 cloves garlic, unpeeled
  • 900 g beef neck, cut into 2-5 cm pieces.
  • 1/2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 1 cup chopped cilantro
  • 1/4 tsp dried thyme
  • 2 bay leaves
  • Corn tortillas, warm with a variety of side dishes (cheese, green onions, chips, salsa) for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat a large cast-iron skillet or Dutch oven over medium-high heat. Add the chiles and cook, pressing them with a spatula, for 10 seconds per side; transfer to a plate. Add the tomatoes, onion, and garlic and cook, stirring, until the vegetables are spotted, about 10 minutes.
  • Step 2
  • Peel the garlic and place it in a blender along with the tomatoes and onion. Cut the chili into pieces and add it to the blender along with 1/2 cup water and 1 teaspoon salt; blend until smooth. Strain the mixture through a fine-mesh sieve into the pan.
  • Step 3
  • Add the beef to the skillet and coat with the chili sauce using tongs. Cook over medium-high heat, stirring occasionally, until a crust begins to form on the meat, about 10 minutes. Add the cumin, cinnamon, and cayenne pepper and cook for another minute. Meanwhile, puree 2.5 cups of water, cilantro, and thyme in a blender; add to the skillet along with the bay leaves.
  • Step 4
  • Reduce heat to low. Cover and simmer gently until the meat is very tender, about 2 hours, adding up to 1.5 cups of water if the sauce becomes too thick. Remove the bay leaves and season with salt and black pepper. Serve in flatbreads with a selection of side dishes.
