Preparation:

    Step 1
  • Preheat the oven to broil. Split the hamburger buns in half horizontally and place them on a baking sheet. Spread 1 tablespoon of mayonnaise on all sides. Grill until golden brown on both sides, 1-2 minutes per side. Cut into very small pieces and set aside.
  • Step 2
  • Combine the cheese, 0.5 cups mayonnaise, and a pinch of salt in a food processor and blend until very smooth. Transfer to a bowl, cover, and refrigerate until ready to use.
  • Step 3
  • Combine the remaining 1/2 cup mayonnaise, ketchup, and mustard in a saucepan, cover, and refrigerate until ready to use.
  • Step 4
  • Place the bacon in a large nonstick skillet (in batches if necessary) and heat over medium heat. Cook until crispy, 4-5 minutes per side. Remove from the skillet, let cool slightly, and chop into small pieces.
  • Step 5
  • Wipe out the skillet. Heat the vegetable oil in a skillet over medium-high heat. Add one-third of the onion and cook, stirring frequently, until softened and just beginning to brown, about 4 minutes. Add the ground beef, 3/4 teaspoon salt, and a pinch of freshly ground black pepper. Cook, stirring and breaking up the ground beef into smaller pieces, until browned and cooked through, about 4 minutes. Stir in 1/3 cup of the prepared ketchup sauce and cool the meat mixture to room temperature.
  • Step 6
  • Let the cheese mixture soften at room temperature for about 30 minutes before assembling the dip. Pour the dip into a 3-quart clear glass trifle bowl or any serving bowl. Spread the cheese mixture over the top, then layer the buns, tomatoes, meat mixture, remaining ketchup sauce, pickles, remaining onions, and bacon in even layers.
  • Step 7
  • Wrap and refrigerate until completely chilled, at least 1 hour or overnight. Top with shredded lettuce just before serving. Serve with chips for dipping.
