While the London broiler steak is frying in the pan, prepare some Yorkshire pudding in the oven, adding sharp grated cheddar to the batter for a savory and chewy pudding. Serve with thinly sliced ​​steak and roasted tomatoes instead of bread.

  • 700 gr. London broil steak
  • 2 tsp Worcestershire sauce
  • 3 large eggs
  • 1 cup whole milk
  • 1 cup flour
  • 2 green onions, chopped
  • 0.5 cup grated sharp cheddar (about 60 g)
  • 2 tablespoons unsalted butter, melted
  • 0.5 tbsp. vegetable oil
  • 3 plum tomatoes, halved
Substituting ingredients

3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 230°C. Rub the steak with Worcestershire sauce, 1/2 teaspoon salt, and freshly ground black pepper; set aside.
  • Step 2
  • Make Yorkshire pudding:

    Combine the eggs and milk in a large bowl; add the flour, green onions, cheese, and 0.5 teaspoon salt and mix into a batter. Lightly grease a deep pie pan with a little butter, then stir the remaining butter into the batter. Pour the batter into the prepared pie pan and bake until golden brown, 20-25 minutes.
  • Step 3
  • Meanwhile, heat the vegetable oil in a large skillet over medium heat until very hot. Add the steak and cook until browned on the bottom, about 5 minutes. Flip the steak, reduce the heat to low, and cover the skillet with a lid. Continue cooking until a thermometer inserted into the center of the steak registers 125°F (49°C), 10 to 12 minutes.
  • Step 4
  • Transfer the steak to a cutting board, cover with foil, and let rest for 10 minutes. Add the tomatoes, cut-side down, to the pan; cover and cook until tender, 5 minutes. Thinly slice the steak against the grain and season with pepper. Cut the Yorkshire pudding into wedges. Serve with roasted tomatoes.
