Grilled London broiler steak, topped with Parmesan cheese, is sliced very thinly across the grain and served with a topping of roasted vegetables, mushrooms, and bacon. Dried Italian herbs and basil add a Mediterranean flair, making it the perfect summer treat.

Steak
- London broiler weighing 1-1.3 kg at room temperature
- Olive oil to brush the steak
- 1/4 tbsp. grated parmesan
Topping
- Olive oil, as needed
- 4 strips bacon, cut into pieces
- 2 cups thinly sliced champignons
- 2 cups frozen pearl onions, thawed and patted dry
- 1 green bell pepper, seeded and chopped
- 1 red bell pepper, seeded and chopped
- 1 tbsp Italian seasoning
- 2 cups cherry tomatoes
- 0.5 tsp chili pepper flakes
- 1/4 cup chopped fresh basil

Preparation:
- Step 1
- Steak:
Preheat the grill to medium-high heat. Generously season the steak on all sides with salt and pepper and brush with olive oil.
Step 2 - Place the steak on the grill and cook for about 5 minutes. Flip and cook for another 3-4 minutes to your desired doneness, or until the internal temperature reaches 125-125°F (48-51°C). Transfer to a plate, sprinkle evenly with Parmesan cheese, and cover loosely with foil. Let rest for 10 minutes before slicing. Step 3
- Topping:
In a large skillet over medium heat, heat 2 tablespoons of olive oil and add the bacon. Cook, stirring, until crisp, about 5 minutes. Transfer with a slotted spoon to a paper towel-lined plate.
Step 4 - Add the mushrooms to the skillet and cook until softened, 3-5 minutes. Season with salt and pepper, transfer to a large bowl with a slotted spoon, and add the bacon. If the skillet is dry, add 1 tablespoon of oil, then add the onion. Cook, without stirring, until the onion begins to brown. Stir the onion and continue cooking until softened, 5-8 minutes. Transfer to a bowl. Step 5
- Add a little oil to the pan, then add the bell peppers and Italian seasoning and stir. Cook until the peppers are slightly softened, 3-5 minutes, then transfer to a bowl. Step 6
- Add the tomatoes and garlic to the pan and cook until the tomatoes begin to burst, 5-8 minutes. Transfer to a bowl. Add the basil, toss, and serve the vegetables over the steak.
