The key to Trisha's easy casserole lies in pre-cooked potatoes and ground meat with cheese. Trisha Yearwood advises, "If the ingredients are still hot when you combine them, the baking time will be significantly reduced, and you might even eliminate it altogether. Simply brown the top under the broiler for a few minutes."


Ingredients:

  • 1.5 kg potatoes, peeled and cut into 1 cm diameter bars
  • Salt
  • Vegetable oil, for greasing the frying pan
  • 0.5 kg lean ground beef
  • 0.5 finely chopped onion
  • 4 tbsp (60 g) butter
  • 1/4 cup wheat flour
  • Black pepper
  • 2 cups of milk
  • 2 cups grated mature cheddar cheese
  • 0.5 tbsp. breadcrumbs
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the potatoes in a large saucepan, filling with water to a 1 cm (0.5 in) level. Add a generous pinch of salt and cook until tender, about 15 minutes. Potatoes cook quickly. Check them frequently to avoid overcooking. Alternatively, you can boil the potatoes in a pressure cooker for 5 minutes, turning off the heat early to prevent them from becoming overcooked. Drain the potatoes, then arrange them on a baking dish.
  • Step 2
  • Heat a little olive oil in a frying pan. Combine the ground beef and onion and cook over medium heat until the ground beef is browned and the onion is soft, about 10 minutes. Drain off any excess oil.
  • Step 3
  • Preheat oven to 180°C.
  • Step 4
  • Melt the butter in a medium saucepan and whisk in the flour to make a roux. Cook over medium heat, stirring constantly, until the mixture begins to bubble and the flour turns brown. Gradually whisk in the milk, continuing to stir. When the mixture begins to thicken, season with salt and pepper, then stir in the cheese and fried ground beef with onions.
  • Step 5
  • Sprinkle the ground meat mixture over the potatoes and bake the casserole for 20 minutes, until it's cooked through and bubbly. Sprinkle the casserole with breadcrumbs, then bake for another 5 minutes, until the breadcrumbs are golden brown.
