Beef steak with sweet and spicy caramelized onions... What could be more delicious? Caramelized onions braised in beer! What a perfect accompaniment to meat. The onions are braised in beer with bacon bits and thyme, resulting in a truly aromatic and delicious dish. Serve it over the steak instead of sauce or gravy, and serve with egg noodles and green peas.

    Step 1
  • In a large nonstick skillet over medium-high heat, cook the bacon, stirring occasionally, until crisp, about 6 minutes. Add 1 tablespoon of olive oil, then add the onion and cook until softened, about 3 minutes.
  • Step 2
  • Add the thyme sprigs, 1/2 teaspoon salt, and a few grinds of black pepper and cook until the onions are lightly browned, about 5 minutes more. Add the beer, reduce the heat to medium, and simmer until reduced by three-quarters, about 15 minutes. Increase the heat to high, pour in the beef broth, and simmer until the sauce thickens, about 2 minutes more; season with salt and pepper to taste. Discard the thyme.

  • Meanwhile, bring a saucepan of salted water to a boil. Add the noodles and cook according to package directions, adding the green peas 2 minutes before the end of the cooking time. Drain and return the noodles and peas to the saucepan. Add 1 tablespoon of butter, salt, and pepper to taste; keep the noodles warm.

  • Season the steaks with salt and pepper on both sides. In a large nonstick skillet, heat the remaining 1 tablespoon of olive oil and butter over medium heat. Fry the chops in batches until cooked through, about 1 minute per side. Serve with noodles, top with sautéed onions, and sprinkle with parsley.
