Trinidadian Curried Goat Meat - A Detailed Recipe.


Ingredients:

  • 900 g goat meat, cut into 5 cm cubes (with or without bone)
  • 2 tbsp. curry powder
  • 1/2 tsp salt
  • 4 chopped eryngium leaves (can be substituted with chopped cilantro)
  • 2 crushed cloves of garlic
  • 1 medium-sized onion, sliced ​​into half rings
  • Vegetable oil
  • Roti flatbreads for filing
  • Hot pepper sauce for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a tightly sealed container, combine the meat, a tablespoon of curry powder, salt, and eryngium leaves. Stir and let sit for an hour or while you prepare the remaining ingredients.
  • Step 2
  • In a skillet or saucepan over medium heat, sauté the garlic and onion in a small amount of oil until translucent. Then add the remaining tablespoon of curry powder. Stir until the curry paste darkens slightly.
  • Step 3
  • Then add the seasoned meat, increase the heat, and lightly brown the meat, stirring occasionally. Add 3 cups of water and simmer for about an hour, covering the pan and stirring every 15 minutes. The dish is ready when most of the water has evaporated and the meat is as tender as you like it.

    Serve with roti and a hot sauce (such as piquillo pepper sauce).
