What could be more delicious in the morning than a hearty and flavorful hot sandwich? In Mexico, for example, these sandwiches are quite popular for breakfast and are called Molletes. The main ingredients of Molletes are refried beans and cheese. But depending on the region and personal preference, eggs, salsa, vegetables, and even meat are also used. Make the most delicious Molletes using this recipe. For these, you'll need oblong buns cut in half. Place refried beans, fresh tomatoes, and fried eggs on them, top with a cheese and crispy bacon mixture, and toast the sandwiches in the oven. Sprinkle with fresh herbs, and enjoy these juicy yet crispy Molletes.


Ingredients:

  • 2 soft buns, 15-17 cm long, cut in half lengthwise
  • 240 g grated pepper jack cheese
  • 1 can 425-450 g refried beans (about 1.5 cups)
  • 4 slices bacon, coarsely chopped
  • 1-2 ripe, juicy tomatoes, sliced ​​0.5 cm thick (you'll need about 12 slices)
  • 1 tbsp (15 g) butter
  • 4 large eggs, beaten well with a fork
  • 3 green onions, thinly sliced
  • 2 tablespoons fresh coriander leaves
  • Salsa or hot sauce, for serving (optional)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat the oven to broil. Place the buns, cut side up, under the broiler and broil until golden brown around the edges, about 2 minutes.
  • Step 2
  • Place cheese and refried beans in separate medium bowls.
  • Step 3
  • In a cast-iron or other heavy-bottomed skillet, fry the bacon over medium heat, stirring once or twice, until crisp, about 8 minutes. Remove the skillet from the heat. Using a slotted spoon, transfer the bacon to the bowl with the cheese and fluff with a fork.

    Add 2 tablespoons of rendered bacon grease to the bowl with the refried beans and mix well. Pour the remaining bacon grease into a small bowl. Do not wipe the pan clean.
  • Step 4
  • Place the buns cut-side up on a baking sheet. Spread the beans evenly over the buns, spreading them toward the edges. Top with tomato slices and a little salt. Drizzle with a little of the remaining bacon grease.
  • Step 5
  • Place the butter in a frying pan and melt over medium heat. Beat the eggs until foamy. Pour them into the pan and fry, using a silicone spatula to pull them toward the edges as they set, and tilt the pan to allow the raw egg to drip to the bottom (you may need to scrape a little from the center toward the sides of the pan as you fry).

    Cook until most of the egg is set but still slightly runny on top, 1 to 2 minutes. Remove from heat. Using a metal spatula, cut the egg into pieces and arrange them on top of the tomatoes. Top with the bacon-cheese mixture.
  • Step 6
  • Toast the moletes in the oven until the cheese is bubbling and golden brown, rotating the pan if necessary to prevent burning, 1-2 minutes. Sprinkle with green onions and cilantro. Serve with salsa and hot sauce.
