Anthill Cake

This cake is more like a хворост (fancake) than a traditional cake. It's easy to make with a simple, pancake-like batter, but it's loved for its crispiness and cheerful appearance. American funnel cake is homemade, similar to the хворост (fancake) sold at fairs. As the name suggests, you'll need a funnel cake (or a sauce bottle) to make it. The batter is poured into the funnel cake and then spirals down into hot oil in a frying pan in a long strip. It's fried for just a couple of minutes, and then it's ready to serve. Funnel cake is typically eaten dusted with powdered sugar or with other toppings of choice, such as jam, custard, or whipped cream.


Ingredients:

  • 2 cups of milk
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 2 cups premium flour
  • 1 teaspoon of salt
  • 1 teaspoon of baking soda
  • 1 tbsp. sugar
  • 55 g melted butter
  • Powdered sugar, for dusting
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large bowl, combine the milk, egg, and vanilla extract. In a separate bowl, combine the flour, salt, baking soda, and sugar and gradually add to the liquid mixture. Using a mixer, mix until smooth. Stir in the melted butter. Pour the batter into a funnel (or sauce bottle), pinching the opening with your index finger.
  • Step 2
  • Place the funnel over the hot oil and remove your finger to create a batter flow. Move the funnel in a circular motion to create a spiral flow. Fry for 2-3 minutes until golden brown. Sprinkle with powdered sugar.
