Alexander Cake

A popular cake in Latvia and East Germany, it was first baked in Riga for the Russian Emperor's visit to Latvia. Despite its simple recipe, the cake is incredibly delicious thanks to the harmonious combination of layers, berry filling, and sugar glaze. Alexander cake consists of three shortbread layers, layered with raspberry jam and topped with a lemon-sugar glaze. It is usually made rectangular and cut into small squares.
Ingredients:
- 1 cup of sugar
- 1 tsp vanilla extract, optional
- 3 cups of flour
- 0.5 tsp salt
- 2 cups (460 g) butter
- 1 cup seedless raspberry jam
- 3 tablespoons lemon juice
- 2 cups powdered sugar
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:
- Step 1
- In a large bowl, combine flour, sugar, salt (and vanilla, if using). Add the butter and chop it into the flour, mixing well until the dough comes together. Divide the dough into three equal portions. Wrap in plastic wrap and refrigerate overnight. Step 2
- Let the dough rest at room temperature (to make it easier to roll out). Preheat the oven to 180°C (350°F). Roll each portion between two sheets of waxed paper to fit your baking pan (e.g., 25 x 40 cm). Remove the top paper. Transfer the dough on the paper to the pan. Bake for 10-12 minutes until golden brown, being careful not to let the crust darken. Be careful, as it can burn quickly. Step 3
- Remove the cake from the oven. Let cool for 2 minutes. Place a cutting board on the pan and invert it to remove the cake. Remove the parchment paper. Spread half of the jam on the cake. Using another cutting board, carefully place the second layer on top of the first. Spread with the remaining jam. Bake the third cake layer and place it on top of the cake. Step 4
- Mix powdered sugar with lemon juice. Spread a thin layer of the glaze over the cake. Let it set completely. Cut into small rectangles measuring 4 x 8 cm and serve with good strong coffee.
