Although this dip is made with mayonnaise and sour cream, fresh zucchini puree makes it healthier and lower in calories, while caramelized onions, dill, garlic, and red wine vinegar infuse it with a whole range of flavors, with sweet, tart, and savory notes. Serve as an appetizer to dip with chips, crackers, or fresh vegetables.


Ingredients:

  • 1 finely chopped sweet onion
  • 1 medium zucchini, sliced
  • 0.5 cup mayonnaise
  • 1/4 cup chopped dill
  • 1/4 cup chopped green onions
  • 2 tsp white wine vinegar
  • 0.5 tsp onion powder
  • 0.5 tsp granulated garlic
  • 1.5 cups low-fat sour cream
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium skillet over medium-high heat, cook 1 finely chopped sweet onion in 2 tablespoons vegetable oil until golden brown and very soft, 20 to 25 minutes; let cool.
  • Step 2
  • In a food processor, combine 1 sliced ​​medium zucchini with 1/2 cup mayonnaise, 1/4 cup each chopped dill and green onion, 2 teaspoons white wine vinegar, and 1/2 teaspoon each onion powder, granulated garlic, and coarse salt.
