Cumin, freshly squeezed orange juice, and spices infuse tender pork loin with rich flavor. This slow cooker recipe is inspired by Cuban cuisine, where the vibrant flavor comes from the combination of sweet orange and zesty spices.

Ingredients:

  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1/2 cup fresh cilantro (leaves and soft stems), coarsely chopped, plus extra for serving
  • 6 cloves garlic, finely chopped
  • 1 tbsp + 1 tsp extra-virgin olive oil
  • 4 natural pork cutlets, 2 cm thick, on the bone (1.1 kg)
  • 2 tsp ground cumin
  • 2 oranges, cut in half
  • 1 cup white rice
  • 0.5 cup frozen green peas
  • 1 tbsp. white wine vinegar
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a 6- to 8-quart slow cooker, combine the onion, bell pepper, cilantro, and garlic with 1 tablespoon olive oil. Rub the pork chops with cumin, 3/4 teaspoon salt, and freshly ground black pepper; add to the slow cooker. Drizzle with the remaining 1 teaspoon olive oil, squeeze the juice of 1 orange, and add the squeezed orange halves to the pot. Cover and cook over low heat until the pork is very tender, 7-8 hours.
  • Step 2
  • Cook the rice according to package directions, adding the green peas 3 minutes before the end of cooking. Transfer the pork chops to a bowl, remove the bones, and shred the meat with two forks. Combine the vinegar and juice of half an orange in a slow cooker. Season with salt and pepper, and drizzle with the juice of the remaining orange half.
  • Step 3
  • Return the pork to the slow cooker. Fluff the rice with a fork, stirring it into the peas. Serve the pork with rice, garnished with cilantro.
