This festive eggnog has half the calories of the classic non-alcoholic version and nearly 95% less fat. Orange zest and a cinnamon stick infuse it with a magical aroma and flavor you'll want to savor again and again. The perfect drink to make a New Year's wish!

Ingredients:

  • 3 cups of skim milk
  • 2 pieces of orange zest
  • 1 cinnamon stick
  • 2 large eggs
  • 0.5 cups of sugar
  • 1 tbsp vanilla extract
  • Ground cinnamon, for serving
  • Special equipment: cappuccino maker or immersion blender; 4 beer glasses with stems, 280 ml.
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a nonstick saucepan, combine 2 cups of milk, orange zest, and cinnamon. Heat over medium-high heat, just below a boil. Remove from heat and let steep for 30 minutes. Refrigerate the remaining milk.
  • Step 2
  • Bring the milk mixture back to a simmer over medium heat. Meanwhile, whisk the eggs and sugar together in a medium bowl. Gradually pour half the hot milk into the egg mixture, whisking constantly. Pour the hot egg mixture back into the milk and simmer the custard over low heat, stirring constantly, until thickened, about 4 minutes. Do not allow the custard to boil. Strain the custard into a bowl. Discard the cinnamon and orange zest. Stir the vanilla into the custard and let it cool to room temperature, then refrigerate.

  • When ready to serve, froth the remaining cold milk with a frother or immersion blender and fold it into the custard. Serve the eggnog in mugs, sprinkled with cinnamon.
