Salmon steaks and fillets

Salmon steaks (pictured above) or fillets (below) are best for grilling. Wild salmon has the best flavor and texture.

Salmon with skin

Step 1: Buy salmon with skin
The skin prevents the fish from falling apart and sticking to the grill. Remove the intermuscular bones, then gently pat the fish dry and season with salt and pepper. Tip: Sprinkling the fish with salt will prevent it from sticking to the grill.

Start frying

Step 2: Start frying
Place the fish on an oiled grill over medium-high heat. Place the fillets skin-side down first; if you prefer crispy skin, place the fillets skin-side down first. Leave some space between the fillets to ensure even cooking. Leave the fish alone.

Turn the fish over

Step 3: Flip it over
When the salmon is done, it releases easily from the grill. Use a flat spatula to turn the fish over when it's 60% cooked. A 2.5 cm thick piece will cook for 6-10 minutes. After 6 minutes, it will be slightly pink in the center. After 10 minutes, it's fully cooked.
Tip: If white drops appear on the surface and sides of the fish, it has been fried too long.

Step 4: Let it sit
As with any protein, remove the finished fish from the grill and let it rest. After removing the salmon from the heat, continue cooking for a few more minutes.

For a simple presentation, serve the fish with lemon.
