Unlike traditional English scones, these buns are more like soft cookies, but they're made with the same ingredients: flour, sour milk, eggs, baking powder, and butter. The batter is thinner, so you can stir in blueberries without damaging them. Roll them in flour first to prevent them from sinking and to ensure they're nicely distributed over each scone. Spoon the free-form scones onto a baking sheet and bake until golden brown. Then, brush the finished scones with orange glaze. Its citrusy notes pair beautifully with the sweet blueberries and enhance the flavor of the baked goods.


Ingredients:


Scones
  • 2 cups flour + extra for coating the berries
  • 1 tbsp baking powder
  • 1 teaspoon of salt
  • 1/3 cup sugar
  • 1/4 cup butter, chilled and cut into pieces
  • 3/4 cup sour milk or cream
  • 1 egg
  • 2 cups fresh blueberries

Orange glaze
  • 2 tbsp (30 g) butter
  • 2 cups sifted powdered sugar
  • Juice and zest of 2 oranges
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C.

    In a large bowl, sift together the flour, baking powder, salt, and sugar. Mix thoroughly. Using two forks or a pastry cutter, fold in the butter. The butter should be coated in flour and resemble crumbs.
  • Step 2
  • In another bowl, combine the sour milk and egg, then fold into the flour mixture. Mix all the ingredients together, but do not overmix the dough.
  • Step 3
  • Dredge the blueberries in flour until completely coated, so they don't sink to the bottom of the scones during baking. Fold the blueberries into the batter, being careful not to crush them. Spoon the batter onto an ungreased baking sheet.
  • Step 4
  • Bake for 15-20 minutes until golden brown. Cool the scones before glazing with orange glaze.
  • Step 5
  • To make the orange glaze: Combine the butter, sugar, orange zest, and juice in a double boiler. Cook until the butter and sugar melt and the mixture thickens. Remove from the heat and whisk until smooth and slightly cool. Drizzle or brush the glaze over the scones and let them set until opaque.
