The shrimp are poached in a spiced broth with lemon, coriander, mustard seeds, and bay leaf, infusing them with their amazing flavor. Once they're done, immediately plunge them into ice water to stop the cooking and leave them pleasantly firm and slightly crisp. You can poach them the night before and store them in the refrigerator, just like remoulade. This French mayonnaise-like sauce is made with mustard, hot sauce, green onions, celery, and lemon juice. It's perfect with seafood. Serve the shrimp with remoulade as a cold appetizer. Your guests will be delighted.


Ingredients:


Shrimps
  • 1 lemon
  • 1 tbsp. coriander seeds
  • 1 tbsp mustard seeds
  • 2 dried bay leaves
  • 36 large shrimp, raw, shelled and deveined (you can ask them to devein them at the fish counter)

Remoulade
  • 1.5 cups mayonnaise
  • 0.5 cup Creole mustard, to taste
  • 2 tsp cayenne pepper sauce, to taste
  • 2 green onions, thinly sliced
  • 1 stalk celery, finely chopped
  • Juice of 1 lemon
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Shrimps:


    Place a deep saucepan half-filled with water on the stove over high heat. Squeeze the juice of 1 lemon into the water and drop the lemon half into the pan. Add the coriander seeds, mustard seeds, and bay leaf. When the water boils, add the shrimp. Cook until they turn pink and the tails curl into a crescent shape, 4-5 minutes. Drain and rinse the shrimp under cold running water.
  • Step 2
  • In a small bowl, combine mayonnaise, mustard, cayenne pepper sauce, green onions, celery and lemon juice.
  • Step 3
  • Arrange the shrimp around the sauce on a serving platter and serve.
