Provençal tomatoes are tomato halves filled with a crunchy mixture of breadcrumbs, garlic, and Provençal herbs, then grilled and served immediately. These simple yet delicious stuffed tomatoes are quite popular in the south of France, where they are widely served as an appetizer or side dish with roast meat. The combination of sweet baked tomatoes, garlic, and herbs is so delicious that you'll be reaching for another tomato.


Ingredients:

  • 4 plum tomatoes, halved lengthwise
  • 3 tbsp. l. olive oil
  • Coarse salt and freshly ground black pepper
  • 2 cloves garlic, crushed
  • 1 tsp Provencal herbs
  • 1/4 cup plain breadcrumbs
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat 2 tablespoons of olive oil in a medium skillet. Season the tomato slices with salt and pepper. Place them cut-side down in the skillet and cook for 3 minutes. Add the garlic, turn the tomatoes cut-side down, and cook for another 2 minutes.
  • Step 2
  • Remove the tomatoes from the pan and set aside. Add to the pan. breadcrumbs and Provencal herbs and cook, stirring, for 2 minutes, or until crumbs are coated with oil, adding an additional 1 tablespoon oil if necessary.
  • Step 3
  • Meanwhile, preheat the oven to broil. Line a baking sheet with foil and place the tomatoes, cut-side up, on the foil. Spread the breadcrumbs evenly over the tomato halves. Grill for 1 minute and serve.
