The very core of the lettuce contains particularly bitter substances. These substances aid digestion and strengthen blood vessels. Chicory is especially effective for treating diabetics.

Salad contains only 10 kcal per 100 g and is rightly considered one of the lowest-calorie salads. The roots and leaves of the plant contain large amounts of the polysaccharide inulin, as well as proteins, tannins, and vitamins. Furthermore, its high mineral content makes it one of the healthiest.

If desired, the bitter core can be carefully cut out and the remaining portion used to make a salad with a piquant taste.
