Mexican flautas (flautas) are deep-fried tortilla tubes filled with a variety of fillings. They can be served as a main course or as an appetizer. This flautas recipe uses shredded grilled chicken, making them incredibly easy to make! Fry the tubes in vegetable oil until crispy on the outside and the filling is heated through. Serve with avocado cream, a light radish salad, salsa, and lime wedges for a drizzle.

Ingredients:

  • 3 tbsp. chopped grilled chicken
  • 16 corn tortillas
  • 1 Hass avocado, halved, pit removed
  • 0.5 cup sour cream
  • 2 limes (1 halved, 1 cut into wedges)
  • 6 radishes, thinly sliced
  • 1.5 cups fresh salsa
  • 2 tbsp coarsely chopped fresh cilantro
  • Vegetable oil, for deep-frying
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the avocado pulp in a blender. Add sour cream and the juice of half a lime. Blend until smooth. Season with salt to taste.
  • Step 2
  • Squeeze the remaining lime half over the radishes in a small bowl and sprinkle with 1/4 teaspoon salt. In a medium bowl, combine the shredded chicken with 3/4 cup salsa.
  • Step 3
  • In a large skillet or wok, heat 2 cm of vegetable oil over medium heat until it registers 190°C on a deep-fry thermometer.
  • Step 4
  • Meanwhile, wrap the tortillas in paper towels and microwave until soft, about 45 seconds. Spoon the chicken mixture into the center of the tortillas. Fold the sides in and roll up like a burrito; secure with toothpicks.
  • Step 5
  • Fry the flautas, a few at a time, in oil, turning as needed, until golden brown, 2-3 minutes. Transfer to paper towels with tongs to drain excess oil, and remove toothpicks. Serve with avocado cream, radishes, cilantro, lime wedges, and the remaining 3/4 cup salsa.
