How to Make Pancakes with Orange Jam

Serve fluffy pancakes with whipped butter and orange marmalade, topped with fresh orange slices, for breakfast, and your morning will be bright and sunny, even on a cloudy day! Take a little time to peel the membranes from the orange slices so the tender segments will better blend with the butter. The result will impress everyone.

Ingredients:

  • 11 tablespoons unsalted butter, room temperature, plus extra for the pan
  • 2 tbsp. orange confiture
  • 1 and 3/4 cups premium flour
  • 3 tablespoons of sugar
  • 1 tbsp baking powder
  • 1/4 teaspoon fine salt
  • 1 and 1/4 cups milk, room temperature
  • 0.5 tsp vanilla extract
  • 2 large eggs, room temperature
  • Orange slices, for serving
  • Maple syrup, for serving (optional)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 95°C.
  • Step 2
  • In a medium bowl, beat 8 tablespoons of butter with a wooden spoon or spatula until smooth. Add 1 tablespoon of orange preserves and mix well. Let stand at room temperature.
  • Step 3
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a medium bowl, combine the milk, vanilla extract, eggs, and the remaining 1 tablespoon of jam. In a large nonstick skillet, melt the remaining 3 tablespoons of butter over medium heat. Cool slightly, then stir into the milk mixture (do not wash the skillet). Add the milk mixture to the flour mixture and knead into a thick, lumpy dough.
  • Step 4
  • Heat a skillet over medium heat and lightly grease with butter. Pour 2 tablespoons of pancake batter into the skillet at a time. Cook until bubbles appear on the surface of the pancake and the bottom is golden brown, about 2-3 minutes. Flip and continue cooking until golden brown on the bottom and cooked through, another 1 minute.
  • Step 5
  • Place the finished pancakes in the oven to keep them warm and continue frying until all the batter is gone.

    When measuring flour, spoon it into a dry measuring cup and remove any excess. Scooping flour directly from the bag with a measuring cup will compact it, resulting in dry baked goods.
  • Step 6
  • Serve with orange oil and orange slices. Drizzle with maple syrup, if using.
