This method is convenient because you don't have to re-roll the scraps and overwork the dough. Once the cookies have cooled completely, decorate them with ganache, icing, and colored sugar or sprinkles.

Ingredients:

  • 1 and 1/3 cups premium flour
  • 0.5 tsp of soda
  • 1/4 teaspoon fine salt
  • 110 g unsalted butter at room temperature
  • 3/4 cup firmly packed light brown sugar
  • 3/4 cup creamy peanut butter
  • 1 large egg, beaten
  • Cooking spray
  • Chocolate ganache
  • Royal icing
  • Colorful sprinkles or colored sugar
  • Special equipment: silicone mold for shaped cookies
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium bowl, whisk together the flour, baking powder, and salt. In the bowl of a stand mixer, beat the butter and sugar on medium speed until light and fluffy, about 8 minutes. Add the peanut butter and egg.
  • Step 2
  • Reduce mixer speed and gradually add the flour mixture until smooth. Place the dough on a piece of plastic wrap, form it into a disk, wrap it in plastic wrap, and refrigerate until firm, about 2 hours.
  • Step 3
  • Position a rack in the center of the oven and preheat the oven to 325°F (160°C). Spray a cookie sheet with cooking spray. Press the batter evenly into the sheets; they should be three-quarters full.
  • Step 4
  • Bake until the edges are golden brown, about 9 minutes. Remove the cookies from the oven and let them rest in the pans for 5 minutes, then turn them out onto a wire rack and let them cool completely. Repeat with the remaining dough. Decorate the cookies with chocolate ganache, royal icing, and colored sprinkles.
