Ingredients:


Tostado:
  • 6 corn tortillas
  • Vegetable oil for frying
  • 80 gr. grated cheese
  • 0.5 head of iceberg lettuce, chopped and cored
  • 1 thinly sliced ​​avocado, or guacamole, recipe below
  • 2 cups salsa cruda, recipe below
  • 0.5 cup sour cream
  • Refried beans, warm, recipe below
  • 1 thinly sliced ​​green onion
  • 12 cilantro leaves

Chicken:
  • 3 cups chopped cooked chicken
  • 0.33 cups squeezed lemon juice
  • 0.25 cup olive oil
  • 0.25 cup chopped cilantro

Refried Beans:
  • 400g canned pinto beans, mashed and with liquid
  • 2 tbsp. l. olive oil
  • 0.25 medium-sized onion, finely chopped
  • 1 teaspoon ground coriander
  • 1 tsp ground cumin
  • 4 finely chopped garlic cloves
  • 0.25 tsp salt

Salsa Cruda:
  • 2 ripe tomatoes, coarsely chopped, or 4 plum tomatoes
  • 0.25 medium onion, finely chopped (about 3 tbsp)
  • 0.25 crushed jalapeno pepper, seeded
  • 2 tablespoons chopped cilantro
  • 1 teaspoon of salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • To make tortillasHeat about 2.5 inches of frying oil in a large, heavy-bottomed skillet over medium heat and preheat to 400°F (200°C). Add the tortillas one at a time and fry until crisp and golden brown, about 1.5 minutes. Using tongs, transfer to a baking sheet lined with paper towels and sprinkle with salt. Set aside.

    Cooking chickenIn a small bowl, combine the chicken, lime juice, oil, coriander, and salt, adding pepper to taste. Cover with plastic wrap and set aside.

    Preheat the broiler in the oven. Spread the beans evenly on one side of each tortilla and sprinkle with cheese. Place on a baking sheet and broil until the cheese is melted and lightly browned, about 30 seconds. Divide the tortillas among 6 plates.

    Spread the chicken evenly on each tortilla and garnish with lettuce. Top each tortilla with avocado, salsa, and a dollop of sour cream. Sprinkle with green onions and garnish with cilantro leaves. Serve immediately.

    Refried beansHeat oil in a large skillet over medium-high heat. Add the onion, coriander, and cumin and cook, stirring, until the onion is lightly browned, about 2 minutes. Add the garlic and cook until browned, about 1 minute more. Add the beans and cook, stirring frequently, until richly amber-brown, about 4 minutes. Season with salt and pepper to taste.

    Salsa CrudaIn a small bowl, combine the tomatoes, onion, jalapeño, cilantro, and salt, adding pepper to taste. Cover with plastic wrap and set aside.

    Note

    The tortillas should be very crispy after frying, otherwise they will be difficult to cut with a knife or break with a fork.
