Preparation:

    Step 1
  • Preheat oven to 200°C.
  • Step 2
  • Combine the milk and eggs in a blender until completely combined. Add the flour, vanilla extract, cinnamon, 1/2 teaspoon salt, and lemon zest. Blend again until combined, scraping down the sides as needed (about 15 seconds). Cover the blender and refrigerate while you prepare the apples.
  • Step 3
  • Melt the butter over medium heat in a 25cm (9-inch) nonstick oven-safe skillet. Add the apples and sprinkle with granulated sugar. Reduce the heat to medium-low. Cook the apples, stirring occasionally, until golden brown and softened, 20-25 minutes. Spread the apples evenly in the skillet. Stir the batter to combine the ingredients. Pour it over the apples.
  • Step 4
  • Bake the pancake until golden brown and set in the center, and the edges are about 4 cm (1.5 inches) high (25-30 minutes). Serve directly from the pan or transfer to a serving platter using a large spatula. Dust with powdered sugar.
