Simple sugar syrup

It's made with sugar, water, and a little lemon juice to balance the sweetness. Once the sugar has completely dissolved in the liquid, the syrup is ready. Store it tightly covered.

Recipe:

Combine all three ingredients in a 2-quart, heavy-bottomed, non-reactive saucepan and bring to a boil over medium heat. All sugar crystals should dissolve completely. Remove from heat and pour the syrup into a clean medium bowl. Let cool completely before using. If you're short on time, you can cool the syrup in an ice bath. The simple syrup can be refrigerated in an airtight container indefinitely.
Exit: 850 ml.
