This light appetizer, thanks to its color combination, was originally created as a gourmet Halloween treat, but you can make it for any occasion and it's a hit. Orange sweet potato chips are topped with a dollop of white crème fraîche and chopped fresh chives, then garnished with a dollop of black caviar. The combination of salty caviar, sweet sweet potato, and creamy sour cream is simply stunning. Your guests will love this appetizer.

Recipe:


Slice 2 sweet potatoes into 1/4-inch-thick rounds. Brush with olive oil and sprinkle with salt and black pepper. Bake at 425°F (220°C) until crisp, about 15 minutes, then cool on a wire rack. Toss 2 tablespoons chopped chives with 1/4 cup crème fraîche; spoon a dollop of sour cream on each sweet potato round and top with black caviar.
