Appetizers in edible bowls are the perfect treat for any holiday or party. They are distinguished by their impressive presentation, amazing taste, and convenience. These vegetable appetizer bowls are made from boiled plantains, baked in mini muffin cups until they take on a bowl-like shape and become firm. Fill them with a salad of avocado, tomatoes, serrano peppers, bell peppers, and red onions. All vegetables are finely diced and dressed with lime juice and olive oil. Arrange the edible bowls on a tray and serve.


Ingredients:

  • 1 tbsp olive oil + extra for the pan
  • 3 large green plantains, peeled and sliced ​​2cm thick (24 pieces)
  • 1 large avocado, diced
  • 1 plum tomato, diced
  • Half an orange bell pepper, diced
  • 1/4 small red onion, chopped
  • 1 serrano pepper, crushed
  • 2 tablespoons freshly squeezed lime juice
  • 2 tbsp chopped fresh cilantro
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C. Grease a 24-cup mini muffin pan (preferably non-stick) with olive oil.
  • Step 2
  • Bring a large saucepan of salted water to a boil. Add the plantains and cook until tender, 12-15 minutes. Drain and let cool slightly.
  • Step 3
  • Using your fingers, press a piece of plantain into the bottom and sides of each pan to form cups. Bake until the plantain cups are golden brown around the edges, 25-30 minutes. Let cool for 5 minutes, then remove from the pan.
  • Step 4
  • Meanwhile, in a medium bowl, combine the avocado, tomato, bell pepper, red onion, serrano, lime juice, cilantro, olive oil, and 1 teaspoon salt. Gently toss, then divide among the plantain bowls.
