Breaded cod fillet fish sticks, fried in an air fryer

Air fryer fish sticks turn out especially crispy on the outside and juicy on the inside. Just like deep-frying, but without a ton of oil! Cod fillet strips are coated in breadcrumbs with pecorino cheese and seafood seasoning, then fried to perfection, drizzled with a little oil. Serve with tartar sauce.

- 1 piece of fresh cod fillet weighing 450 g, skinless
- 0.5 cups flour
- 2 large eggs
- 3/4 cup spiced breadcrumbs
- 1/4 tbsp. freshly grated Pecorino Romano
- 1 teaspoon seafood seasoning, such as Old Bay
- Coarse salt and freshly ground black pepper
- Cooking spray to spray the fish sticks
- Lemon wedges, for serving

Preparation:
- Step 1
- Cut the cod into strips about 8 cm long, 1 cm wide and 1 cm thick. Pat dry with paper towels, then sprinkle with a pinch of salt and pepper. Step 2
- In a shallow bowl, combine the flour with 1/2 teaspoon of salt and season with pepper. Beat the eggs with a pinch of salt in a second shallow bowl. In a third shallow bowl, combine the breadcrumbs, pecorino, and seafood seasoning. Dredge the fish in the flour, shaking off any excess, then dip it in the beaten egg. Roll in the breadcrumb mixture, turning until evenly coated. Transfer the fish to a large plate or rimmed baking sheet and continue breading the remaining fish. Step 3
- Preheat the air fryer to 200°C. Place several fish sticks in the air fryer basket in a single layer, then lightly spray with cooking spray. Cook, turning once, until golden brown, 3-4 minutes per side. Serve with lemon wedges and tartar sauce for dipping.
