Ingredients:

  • 2.5 cups fresh or frozen cranberries, chopped
  • 3 large eggs plus 3 egg yolks
  • 1 tbsp. sugar turbinado
  • 2 cups of drinking cream 10%
  • 1/2 cup premium wheat flour
  • 3 tbsp. Grand Mernier liqueur or any orange liqueur
  • 1.5 tsp vanilla extract
  • A pinch of salt
  • Unsalted butter for greasing the pan
  • Powdered sugar, for dusting
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a blender, combine the eggs, egg yolks, 1/2 cup turbinado sugar, cream, flour, liqueur, vanilla, and salt. Blend until the sugar dissolves and the batter is smooth, about 1 minute. Let it sit at room temperature for 30 minutes.
  • Step 2
  • Meanwhile, position a rack in the upper half of the oven and preheat to 220°C.

    Grease a 28cm ceramic baking dish or ovenproof deep dish and place on a baking sheet.

    In a small bowl, combine the cranberries with 5 tablespoons of turbinado sugar; arrange the berries in the prepared pan. Bake until the mixture begins to caramelize, about 20 minutes. Remove from the oven and reduce the temperature to 375°F (190°C).
  • Step 3
  • Carefully pour 1 cup of the prepared batter into the hot pan and let it rest for 5 minutes, then pour in the remaining batter. Sprinkle with 3 tablespoons of the remaining turbinado sugar.

    Bake the clafoutis for about 30 minutes, until set and puffed. Place the pie on a wire rack and let cool for 20 minutes. Dust the cranberry clafoutis with powdered sugar.
