Hot chicken became a signature dish of the American city of Nashville, Tennessee, thanks to an anecdote that happened to the owner of a local restaurant at the beginning of the last century. The man was known as a notorious womanizer, and when he returned home one morning, his girlfriend, in retaliation, fried him a chicken, seasoning it generously with hot peppers. The hapless lover surprisingly liked the dish so much that he refined the recipe and added it to his restaurant's menu. Since then, Nashville-style hot chicken has become so popular that it is also served outside the city.

Lovers of spicy dishes will appreciate the fiery crispy crust and juicy tender meat underneath.


Ingredients:

  • 4 skinless, boneless chicken thighs
  • 4 Hawaiian buns
  • 5 tablespoons cayenne pepper
  • 2 tbsp cane sugar
  • 1 tsp chili pepper seasonings
  • 1 teaspoon granulated garlic
  • 1 teaspoon paprika
  • 12 tbsp. vegetable oil
  • 1 cup of sour milk
  • 1 tbsp. hot sauce
  • 2 large eggs
  • 2 cups of flour
  • Butter to spread on the buns
  • Pickled cucumbers for serving
  • Iceberg lettuce for serving
  • Mayonnaise to spread on the sandwich
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large heatproof bowl, whisk together the cayenne pepper, brown sugar, chili powder, granulated garlic, paprika, 1 tablespoon salt, and 1 teaspoon black pepper. Sprinkle the seasoning over the chicken thighs on all sides, then transfer them to a container and refrigerate for 1 to 3 hours. You'll need the remaining seasoning mixture later.
  • Step 2
  • Heat vegetable oil in a large saucepan until a deep-fry thermometer reads 175°C. Place a wire rack on a baking sheet.
  • Step 3
  • In a shallow bowl, whisk together the buttermilk, hot sauce, and eggs. In another bowl, add the flour and season with salt and pepper. Dip the chicken pieces first in the liquid mixture, then coat thoroughly in the flour and carefully drop into the hot oil. Fry until golden brown, about 10-12 minutes. Transfer the cooked chicken to a wire rack.
  • Step 4
  • Pour a ladleful (180–250 ml) of hot oil from frying into the bowl with the spices. Be careful—the mixture will sizzle and splash violently. Stir to release the spices. Brush the chicken pieces with the seasoned oil.
  • Step 5
  • Make sandwichesBrush the halves of the Hawaiian buns with butter and grill them. Place the spicy chicken on the buns, top with pickles, lettuce, and mayonnaise.
