As befits a true winter pastry, this cake is filled with fruits, dried fruits, nuts, and aromatic spices. In addition to raisins and walnuts, mix in some apples puréed in butter and apple cider. This will give your cake a dense, moist texture and a pleasantly heavy, aromatic crumb. But don't forget to check its doneness with a toothpick to avoid underbaking. It's delicious both warm and cold. But it's even more delicious when spread with cream cheese frosting. Serve as a New Year's or Christmas cake.


Ingredients:


Cupcake
  • 55 g butter + extra for greasing the pan
  • 3 Granny Smith apples, peeled, cored, cut into 1cm cubes and tossed with lemon juice
  • Juice of half a lemon
  • 1 cup non-alcoholic apple cider
  • 1 and 3/4 cups flour, plus extra for dusting the pan
  • 1 teaspoon ground cinnamon
  • 1 teaspoon of baking soda
  • 0.5 tsp freshly grated nutmeg
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • A pinch of coarse salt
  • 1 egg
  • 1 tsp vanilla extract
  • 0.5 cups roasted and chopped walnuts
  • 0.5 cups light raisins
  • Cream cheese frosting, recipe below

Cream cheese frosting
  • 220 g of cream cheese at room temperature
  • 110 g of butter at room temperature
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • Juice of half a lemon
  • Special equipment: Standard bread pan
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 175°C.
  • Step 2
  • In a large skillet over medium heat, melt the butter. Add the apples and toss to coat. Add the lemon juice and apple cider. Cook until the apples are softened and the cider has reduced by half. Transfer the apples to a food processor and process until a coarse paste forms. Set aside.
  • Step 3
  • In a large bowl, combine flour, cinnamon, baking soda, nutmeg, both types of sugar, and a pinch of salt. Make a well and add the pureed apples, egg, and vanilla. Knead the dough. Add the walnuts and raisins.
  • Step 4
  • Grease and flour a loaf pan. Pour the batter into the prepared pan and place in the preheated oven. Bake until a toothpick inserted into the center of the cake comes out clean, about 40-45 minutes.
  • Step 5
  • Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and let cool completely.
  • Step 6
  • Cut the cake in half horizontally and spread half the frosting on the bottom half. Place the second cake layer on top and spread frosting over the top of the cake, leaving the sides uncovered. Slice and serve.

    Using a mixer, beat all ingredients until light and fluffy.
