Apple Chutney with Cranberries

Chutney is a traditional Indian spicy fruit sauce made from apples and tropical fruits, flavored with ginger root and hot pepper. The sauce is pureed and used to enhance the flavor of the main dish. Its vibrant color adds richness and depth to the dish. Cranberry chutney pairs perfectly with cheese, poultry, or pork, thanks to its sweet and sour flavor.


Ingredients:

  • 450 g fresh or thawed cranberries (about 4 cups)
  • 1 peeled and chopped apple
  • 3/4 cup coarsely chopped assorted dried fruits (prunes, raisins, dried apricots)
  • 1.25 cups sugar
  • 1 teaspoon ground ginger
  • A pinch of cloves
  • 1/4 cup apple cider vinegar
  • 1/2 cup toasted and chopped pecans
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place all but 1 cup of the cranberries in a saucepan. Add the apple, dried fruit, sugar, ginger, cloves, a pinch of salt, vinegar, and 1 cup of water. Bring to a boil over medium heat; simmer, stirring occasionally, for 15-20 minutes, until the berries burst and the sauce thickens.
  • Step 2
  • Add the remaining 1 cup of cranberries and simmer for 3-4 minutes, until the berries are softened. Remove from heat and stir in the pecans. Let cool, transfer the apple chutney with whole cranberries to a saucepan, and refrigerate for 3 hours. You can store this sauce in the refrigerator for up to 2 weeks.
