This fiber-rich, hearty side dish makes a great addition to any meal. It's made with hulled barley and topped with fried onions and green peas, while fried bacon adds a deeper flavor and a delicious aroma. Hulled barley is considered a whole grain, offering a healthier alternative to other grains, but it also takes longer to cook. If desired, you can substitute pearl barley, which is equally healthy and firm in texture but lower in fiber. Add a refreshing twist of lemon juice and finely chopped dill to the finished side dish.

  • 3/4 cup hulled barley, washed
  • 4 slices bacon, cut crosswise into 1cm strips.
  • 1 tbsp (15 g) butter
  • 1 large onion, thinly sliced ​​into quarter rings
  • 1.5 cups frozen green peas, defrosted (about 220 g)
  • 1 tbsp finely chopped fresh dill
  • 2 tsp freshly squeezed lemon juice
Substituting ingredients

Preparation:

    Step 1
  • In a small saucepan, combine the barley, 3.5 tablespoons of water, and 0.5 teaspoon of salt and bring to a boil over high heat. Reduce the heat to low, cover, and simmer until the barley is tender but still slightly firm, about 50 minutes.
  • Step 2
  • Meanwhile, add the bacon to a large skillet in a single layer and cook over medium heat, stirring occasionally, until crisp, about 6 minutes. Remove the skillet from the heat and transfer the bacon with a slotted spoon to paper towels to drain the excess fat; leave the rendered bacon fat in the skillet.
  • Step 3
  • Return the pan to medium heat and melt the butter in the fat. Add the onion and 1/4 teaspoon of salt and cook, stirring occasionally, until dark golden brown, about 25 minutes. Add the green peas and stir to heat through, about 1 minute.
  • Step 4
  • Drain the barley. Stir the barley into the onion-pea mixture. Add dill, lemon juice, and 1/2 teaspoon each of salt and pepper. Stir. Transfer to a serving platter and sprinkle with bacon.
