Oatmeal cookies with marshmallows, nuts and chocolate - a detailed recipe.


Ingredients:


For the cookies:
  • 1 cup small marshmallows or finely chopped large ones
  • 1 1/4 cups puffed rice (breakfast cereal)
  • 1 cup of heat-stable milk chocolate chips in the form of small drops or regular chopped chocolate
  • 1 cup coarsely chopped pecans
  • 2 cups of oatmeal
  • 2 cups of wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon of baking soda
  • 240 g butter, room temperature
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 large eggs, room temperature
  • 1 tbsp. vanilla extract

For the glaze:
  • 1/2 cup marshmallows
  • 1/2 cup milk chocolate, coarsely chopped
  • 2.5 tsp cream
  • 1/3 cup finely chopped pecans
  • Pinch cayenne pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare cookies: Preheat oven to 180°C. Line 2 baking sheets with parchment paper.

    Combine flour, baking powder, and baking soda and sift into a large bowl. In a separate bowl, beat the butter and both sugars with a mixer on high speed until fluffy.

    Add the eggs and vanilla extract and mix until smooth. Add the flour mixture and mix again.
  • Step 2
  • Add oats, puffed rice, chocolate chips, nuts, and marshmallows to the dough and mix with a wooden spatula. Cover the dough with plastic wrap and refrigerate for 30 minutes.

    Using a tablespoon, drop the dough onto the prepared baking sheets, spacing it 7.5 cm apart.
  • Step 3
  • Bake the cookies for 10-12 minutes, until golden brown. Remove from the oven and cool completely.
  • Step 4
  • Prepare the glaze: Combine the chocolate, marshmallows, cream, and cayenne pepper in a saucepan. Place the saucepan on the stovetop and cook, stirring occasionally, over medium heat until the mixture is smooth and homogeneous, about 5 minutes. Remove from the heat and stir in the nuts.

    Pour the glaze over the cookies and leave for 4 hours until the glaze hardens.
