Small, individual pizzas are grilled, creating deliciously crispy crusts topped with a thick layer of juicy filling. Try a Mexican taco-style pizza, whose flavor is achieved through a perfectly chosen combination of spices and traditional taco toppings: grilled chicken breast, avocado, salsa, sour cream, and cilantro. And the generous amount of melty cheese will make you instantly remember it's pizza.


Ingredients:


Pizza
  • 1/4 cup canola oil, plus extra for greasing
  • 450 g chicken breast fillet
  • 1 package (450 g) of pizza dough
  • Flour, for work
  • 1 tbsp. grated mozzarella
  • 1 cup grated sharp cheddar
  • 1 avocado
  • Juice of 1 lime
  • 0.5 tsp ground cumin
  • 0.5 tsp chili powder
  • 1 tbsp diced red onion
  • 1 cup fresh salsa
  • 0.5 cup sour cream
  • 1/4 cup chopped fresh cilantro

Taco Seasoning
  • 2 tbsp onion powder
  • 2 tbsp garlic powder
  • 1 tbsp. chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper
  • 1 tsp ground cumin
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Make taco seasoning: Mix all ingredients in a bowl with 1 tbsp coarse salt and black pepper.
  • Step 2
  • Prepare the fillingIn a shallow bowl, combine 2 tablespoons of taco seasoning and canola oil. Pound the chicken breasts between 2 pieces of plastic wrap until they are 1/4 inch thick. Place the chicken in the bowl, turning to coat completely, and marinate for 30 minutes.
  • Step 3
  • Preheat the grill to medium-high heat. Grill the chicken breasts until cooked through, about 4 minutes per side. Let cool, then cut into small pieces.
  • Step 4
  • Make pizzaDivide the dough into 3 pieces. Roll each piece on a floured surface into a 20cm (8in) circle. Brush with canola oil, sprinkle with taco seasoning, and grill until crisp, 3-5 minutes per side; remove from the grill.
  • Step 5
  • Combine the cheeses in a bowl, then sprinkle them over the pizza crusts and top with the chicken. Return the pizzas to the grill and cook until the cheese is melted, about 5 minutes. Meanwhile, combine the avocado, lime juice, cumin, chili powder, red onion, salt, and black pepper to taste in a bowl. Spread the avocado mixture on the pizzas. salsa, sour cream and sprinkle with cilantro.
