Charbroiled Lobster Tacos

Grilled tacos (Spanish – taco al carbon) is a typical Tex-Mex taco. The filling for these tacos is cooked over an open fire. Grill lobster over a charcoal grill and wrap it, along with cheese and green onions, in corn tortillas. Serve with a tomato-chipotle salsa, which adds a spicy, sweet-and-spicy flavor with a smoky note.


Ingredients:


Lobster tacos
  • A 1.3 kg lobster, scalded with boiling water and cut in half lengthwise
  • Rapeseed oil
  • 3 green onions (green and light green parts), thinly sliced
  • 8 corn tortillas, 6 inches in diameter, pre-wrap in foil and heat on the grill
  • 1.5 cups of grated cheese

Yellow Tomato and Chipotle Salsa
  • Juice and zest of 2 limes
  • 1 tablespoon chopped chipotle pepper in adobo sauce
  • 2 teaspoons of honey
  • 1/4 cup olive oil
  • 3 yellow tomatoes, halved, seeded and diced
  • Half a small red onion, thinly sliced
  • 1/4 cup chopped cilantro, plus more for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • SalsaIn a medium bowl, whisk together the lime juice and zest, chipotle peppers, honey, and olive oil. Add the tomatoes, onion, and cilantro and stir. Season with salt and pepper to taste.
  • Step 2
  • Preheat grill to high heat.

    Brush the lobster with a little canola oil and season with salt and pepper to taste. Place the lobster, flesh side down, on the grill and grill for 5 minutes until lightly charred. Then remove the meat from the shell and coarsely chop. Transfer the lobster to a bowl, add the green onions, and toss to combine.
  • Step 3
  • Lay it out tortillas Place the tortillas on a flat surface and sprinkle them evenly with grated cheese. Sprinkle a few spoonfuls of lobster meat in the center. Roll the tortillas, brush the tops with oil, and grill, oil side down, for about 1 minute. Brush the other side with oil and flip. Grill until charred grill marks appear and the cheese begins to melt. Transfer the tortillas to a serving platter and sprinkle with cilantro.
