Potato casserole with cheese and bacon

This dish combines the delicious flavors of stuffed crumbled potatoes, but it's made as a large casserole for the whole family. No need to peel the potatoes: the skins add more flavor and contain beneficial micronutrients. Simply wash them thoroughly with a brush and slice. The potatoes are mixed with bacon grease and baked under a layer of cheddar and cream cheese. Top the finished casserole with sour cream and sprinkle with crispy bacon bits and green onions. Perfect as a side dish or a hearty breakfast.
Ingredients:
- 1 kg of potatoes (about 4 tubers), washed with a brush and cut into 2.5 cm pieces.
- 6 slices bacon, cut into 1cm pieces.
- 170 g of cream cheese, room temperature
- 2 cups grated cheddar
- 2/3 cup sour cream
- 2 green onions (white and light green parts only), thinly sliced
1 glass (st.) - 250 ml.

1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.

Preparation:
- Step 1
- Preheat oven to 425°F (220°C) and spray a 3-quart baking dish with cooking spray. Step 2
- In a medium nonstick skillet over medium heat, cook the bacon, stirring occasionally, until browned and crisp, 6-7 minutes. Transfer to a paper towel-lined plate. Reserve 2 tablespoons of the rendered fat. Step 3
- Place the potatoes in the prepared pan. Toss with 2 tablespoons of rendered bacon fat, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Bake until the potatoes are tender and beginning to brown, about 45 minutes. Step 4
- Meanwhile, in a bowl, combine the cream cheese with 1 cup of cheddar. Spoon it over the potatoes and sprinkle with the remaining cheddar. Bake until the cheese is melted and bubbly and the potatoes are cooked through, 13-15 minutes. Step 5
- Spread sour cream evenly over the casserole and sprinkle with green onions and bacon bits.
