Cheese casserole with mushrooms and broccoli

This hearty holiday casserole features mushrooms, broccoli, and cooked rice. All ingredients are tossed in a pan in a creamy sauce with spices, then placed in a baking dish, sprinkled with grated cheese, and baked in the oven until the sauce sets and the cheese is golden brown. For a richer flavor, use a mix of mushrooms, such as shiitake and button mushrooms, and a mix of grated cheeses, such as cheddar and Monterey Jack. Serve as a side dish with holiday meats or as a filling meal on its own.
Ingredients:
- 280g frozen chopped broccoli, thawed and drained
- 3 tbsp butter + extra for greasing the pan
- 2 tbsp. premium flour
- 220 g shiitake or button mushrooms, sliced
- 1/4 cup chopped onion
- 2 cloves garlic, finely chopped
- 0.5 tsp garlic powder
- 0.5 tsp cayenne pepper
- 1.5 cups heavy cream
- 0.5 cup chicken broth
- 2 cups a mixture of grated Cheddar and Monterey Jack
- 3 cups of boiled rice
- Additional equipment: 1 oval casserole with a capacity of 1.8 l.

Preparation:
- Step 1
- Preheat oven to 220°C. Step 2
- Grease a baking dish with butter. In a large saucepan over medium heat, melt 3 tablespoons of butter, add the flour, and cook until golden brown (this will make a roux). The roux should resemble peanut butter in color. Step 3
- Add the mushrooms, onion, garlic, garlic powder, cayenne pepper, cream, and chicken broth. Add the broccoli, 1 cup of cheese, and rice. Season with salt and pepper to taste. Place in a greased baking dish and sprinkle with the remaining cheese. Bake until the cheese is melted and golden, about 20 minutes.
