This recipe offers three variations of spicy wings: a basic version with a mild spiciness, a second version that's even spicier, and a third version—super-hot wings that true fans of this appetizer are sure to appreciate. Each flavor isn't just spicy, but multifaceted, filled with hints of spice. The base spice blend for the basic recipe is ancho chili powder. If you prefer a spicier option, marinate the wings in a mixture of jalapeño and cilantro beforehand, but if that's not enough, brush them with a honey glaze and Asian Sriracha sauce a few minutes before cooking.


Ingredients:

  • 1.3 kg chicken wings, cut at the joints (discard the tips)
  • 1.5 tbsp ancho chili powder
  • 1.5 tsp ground cumin
  • 1.5 tsp ground coriander
  • 1/8 tsp ground cloves
  • Vegetable oil, for frying
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Position oven racks in the upper and lower thirds of the oven and preheat to 450°F (230°C). Line 2 baking sheets with parchment paper and lightly grease them with oil. In a large bowl, combine the chili powder, cumin, coriander, cloves, 2 teaspoons salt, and 3/4 teaspoon black pepper. Add the wings and toss to coat completely.

  • Place the wings spaced apart on the prepared baking sheets. Bake, turning once, until golden brown, about 40 minutes.

    Ancho chili powder adds a subtle smoky flavor to the wings; true wing connoisseurs will want something a little more spicy.

    In a food processor, combine 2 jalapeños, 1/2 cup cilantro, 1/4 teaspoon cayenne pepper, the juice of 1 lime, and 1.5 tablespoons vegetable oil and puree. Toss with the wings and marinate for 2 hours. Shake off any excess marinade, season with the spice mixture, omitting the black pepper, and bake according to the recipe.

    Marinate the wings in the jalapeño mixture (see above), then rub with the spice mixture and bake according to the recipe. About 5 minutes before cooking, brush the wings with a mixture of honey and 3 tablespoons of Sriracha hot sauce.
