Spicy wings in garlic butter sauce

These garlicky wings will be a hit at your backyard party. Grilled, they're incredibly spicy, flavorful, and tangy. Before grilling, the chicken wings are marinated for several hours in a dry marinade made with cayenne pepper and granulated garlic, along with mustard powder, white and black pepper, and ground cumin. Some of this same spice blend is used to make the hot sauce with butter that coats the finished wings. For crispy wings, grill them directly first, then finish cooking away from the coals.


Ingredients:


Chicken wings
  • 1 tbsp granulated garlic
  • 1 tbsp. cayenne pepper
  • 1 tbsp mustard powder
  • 1 tbsp freshly ground black pepper
  • 0.5 tsp ground white pepper
  • 2 tsp ground cumin
  • 1.8 kg chicken wings, tips trimmed

Sauce
  • 2 tablespoons extra-virgin olive oil
  • 1 tbsp. minced garlic (about 2 cloves)
  • 1 jalapeño, finely chopped (remove seeds to reduce heat)
  • 1 bottle (340 g) hot sauce
  • 4 tablespoons unsalted butter
  • 1 tbsp. white vinegar
  • 1 tbsp freshly squeezed lime juice
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare the wings:


    In a large bowl, combine the granulated garlic, cayenne pepper, mustard powder, black pepper, white pepper, and cumin. Set aside 2 tablespoons of the spice mixture for the sauce.
  • Step 2
  • Wash the wings and pat dry with paper towels. Place them in a bowl with the remaining spice mixture and mix well. Place the wings on a baking sheet, cover loosely with plastic wrap, and refrigerate for 1-2 hours.
  • Step 3
  • Light a grill with direct and indirect heat (on a gas grill, turn off the burners on one side; on a charcoal grill, rake all the coals to one side). Grill the wings over direct heat, turning occasionally, until crispy on both sides, 20-25 minutes. Transfer to the cooler side of the grill and cook, turning frequently, until done, 8-10 minutes.
  • Step 4
  • Meanwhile, prepare the sauce:


    In a medium saucepan, heat the olive oil, garlic, and jalapeño over medium-high heat. Cook, stirring constantly, for 1 minute. Add the reserved 2 tablespoons of spice mix and hot sauce. Bring to a boil, then add the butter, vinegar, and lime juice and stir until the butter melts. Keep the sauce warm until ready to serve. Place the wings in a large bowl, pour the sauce over them, and toss to combine.
