At many Chinese restaurants in the United States, at the end of dinner, guests are offered fortune cookies—a crispy, ear-shaped treat with a message on a piece of paper inside. These cookies are easy to make at home anytime, making them a fun treat with friends. Two key points are: first, the dough must spread evenly to create a round cookie, and second, you need to roll the cookies quickly while they're hot and pliable. "You might find it easier to work with cotton gloves to avoid burning yourself," shares Molly Yeh, a character on the TV series Girl Meets Farm.

Ingredients:

  • 0.5 cups of sugar
  • 0.5 cups premium flour
  • 0.5 tsp coarse salt
  • 1 pinch of cardamom
  • 0.5 tsp vanilla extract
  • 1/4 tsp almond extract
  • Whites of 2 large eggs
  • Cooking spray
  • Special equipment: 12 strips of paper with predictions
Substituting ingredients

3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.

1 teaspoon (tsp) - 5 ml.

Preparation:

    Step 1
  • Preheat oven to 190°C.
  • Step 2
  • In a medium bowl, combine the sugar, flour, salt, and cardamom. In a separate medium bowl, combine the extracts and egg whites. Sift the flour mixture into the egg whites and knead until smooth.

  • Spray a baking sheet with cooking spray. Spread 1 tablespoon of the dough onto the baking sheet to form a 3-inch circle (use a jar lid as a guide); make 2 more circles on the baking sheet (bake only 3 circles at a time to allow time to shape the cookies before they set). Bake until the edges are golden brown, 5 to 7 minutes.

  • Working quickly (but carefully, so as not to burn your fingers), use a spatula to flip the circle over. Place the parchment paper in the center, fold the circle in half, then lift it and press the folded side onto the rim of the bowl to form a fortune cookie. Transfer to a muffin tin to help the cookies hold their shape as they cool. Bake the remaining circles and shape the fortune cookies in the same manner.
