Pasta salad with bacon and eggs

Rachel Ray First, she tosses the pasta with a balsamic vinaigrette, then tops the salad with crispy bacon, hard-boiled eggs, and pickled red pimento peppers.


Ingredients:

  • 6 large eggs
  • 450 g of pasta
  • 450 g of bacon
  • About 1/4 cup grated onion and its juice
  • 1 finely grated clove of garlic
  • 1 heaping tbsp Dijon mustard
  • About 3 tablespoons white balsamic vinegar or malt wine vinegar
  • 0.5 cups olive oil
  • Table salt and freshly ground black pepper
  • 0.5 tsp hot sauce
  • 1 jar (110 g) chopped pickled red pimento chili peppers, drained
  • 0.5 cup chopped parsley
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 190°C.
  • Step 2
  • Place the eggs in a small saucepan and cover with water. Bring to a boil over high heat, cover, turn off the heat, and let the eggs sit for 10 minutes. Plunge them into cold water to cool. Crack the eggs and soak them in cold water. Once cooled, peel and slice them.
  • Step 3
  • Meanwhile, bring a large pot of water to a boil and cook the pasta. Arrange 6 slices of bacon on a baking sheet and place in a hot oven. Bake for 15 minutes, until golden brown. Then cool the bacon, chop it, and set it aside.
  • Step 4
  • Chop the remaining bacon and add it to the boiling water along with the pasta. Cook until the pasta is cooked through. Drain, rinse, and separate the cooked bacon from the pasta.
  • Step 5
  • While the pasta is cooking, combine the chopped onion, garlic, mustard, and vinegar in a bowl. Whisk in the oil, season with pepper, and add the hot sauce. Add the chopped eggs, pepper, parsley, and crispy bacon to the pasta. Toss the salad and serve.

    We suggest you cook macaroni and cheese with bacon.
