These sweet and flavorful French toast paninis are delicious, soft, and moist. You don't even need a special sandwich maker to make them. They can be grilled outdoors and served as dessert at a backyard picnic. Soak the bread slices in a flavorful egg mixture, and use grilled bananas for a sweet filling. Assemble the sandwiches and grill them in a skillet, pressing them down with a press. Drizzle the paninis generously with maple syrup and serve.


Ingredients:

  • 6 large eggs
  • 1 cup whole milk
  • 0.5 cups heavy cream
  • 1/4 cup orange juice (squeezed from 1 medium orange)
  • 2 tbsp vanilla extract
  • 2 tbsp. cognac (optional)
  • 2 tbsp. granulated sugar
  • 0.5 tsp ground cinnamon
  • A pinch of grated nutmeg
  • 8 slices of white bread
  • 3 large ripe bananas
  • 2 tbsp (30 g) butter, melted
  • 3 tablespoons of vegetable oil
  • Powdered sugar, for dusting
  • Maple syrup for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a bowl, whisk together eggs, milk, cream, orange juice, vanilla, cognac, sugar, cinnamon, nutmeg and a pinch of salt.
  • Step 2
  • Place the bread in a single layer in two shallow baking dishes. Pour the egg mixture over the bread and let it soak for 10 minutes.
  • Step 3
  • While the bread is soaking, preheat the grill to medium heat. Place a flat cast-iron skillet on the grill. Brush the bananas with melted butter and cook in the skillet until golden brown on all sides and starting to release their juices, about 3 minutes. Using a spatula, transfer the bananas to a plate, then wipe the skillet dry with a paper towel. Once the bananas have cooled, slice them into 1/2-inch-thick slices.
  • Step 4
  • Remove the bread slice from the egg mixture and let any excess drip off. Place it on a cutting board, top with four or five banana slices, then top with another slice of soaked bread. Lightly grease a grill pan with vegetable oil. Place the sandwich in the pan, and place a grill press or heavy skillet on top to press it down. Cook until the bread is toasted and golden brown, 3 to 4 minutes. Flip the sandwich, press it down, and cook the other side until golden brown. Keep the finished sandwiches warm. Repeat with the remaining bread and bananas, adding more oil to the pan if necessary. Divide the paninis among plates and cut in half diagonally; top with powdered sugar and generously drizzle with maple syrup.
