Even a simple vegetable like cauliflower becomes much more appetizing when prepared in a unique way – as steaks. To do this, carefully slice the head of cauliflower lengthwise into even pieces. Some of the florets will fall off, but you can use them as well. For beautiful steaks, first fry them in a frying pan until golden brown, then finish cooking them in the oven. So, be sure to use an oven-safe frying pan. Before serving, garnish each "steak" with a unique relish made from a mixture of roasted peppers, capers, and raisins. Like bright confetti, it will decorate the dish and enliven the mild flavor of the cauliflower with its sweet tartness.

Ingredients:

  • 1 small head of cauliflower (about 1 kg)
  • 1/4 cup finely chopped baked sweet peppers
  • 2 tbsp light raisins, chopped
  • 1 tbsp finely chopped parsley
  • 1 tablespoon apple cider vinegar
  • 2 tsp capers, washed and finely chopped
  • 2 tbsp. l. olive oil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 200°C.
  • Step 2
  • In a bowl, combine roasted peppers, raisins, parsley, apple cider vinegar, capers, and 1/8 teaspoon each salt and pepper.
  • Step 3
  • Trim the base of the cauliflower core, then slice the head into 2.5cm-thick slices. Cut any remaining florets into 2.5cm-thick pieces. Sprinkle 1/4 teaspoon salt and black pepper on both sides of each cauliflower slice.

  • Heat olive oil in a large nonstick skillet over medium-high heat. Add the cauliflower steaks and florets and cook, turning once, until browned on both sides, about 5 minutes. Transfer the skillet to the oven.

  • Bake until a knife inserts easily into the cabbage, 15-20 minutes. Spoon some relish over the cabbage and serve.
